✨ Ingredients

For the Potatoes:

  • 4 large russet potatoes, scrubbed and pierced with a fork
  • 1 tbsp olive oil
  • Salt, to taste

For the Filling:

  • 1½ cups cooked chicken breast, shredded (rotisserie works great!)
  • 6 slices of bacon, cooked crispy and chopped
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ÂĽ cup sour cream
  • 2–3 jalapeños, finely chopped (seeds removed for less heat)
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Optional Toppings:

  • Extra cheddar or pepper jack cheese
  • Sliced green onions
  • Sour cream or ranch drizzle
  • Pickled jalapeños

🔥 Instructions

  1. Bake the Potatoes:
    • Preheat oven to 400°F (200°C).
    • Rub potatoes with olive oil and sprinkle with salt.
    • Bake directly on the oven rack or a foil-lined tray for 45–60 minutes, until fork-tender.
  2. Prep the Filling:
    • While potatoes bake, combine cream cheese, sour cream, garlic, cheddar, jalapeños, chicken, and half the bacon in a large bowl. Mix well. Season with salt and pepper.
  3. Assemble:
    • Once baked, let potatoes cool slightly, then slice them open and fluff the insides with a fork.
    • Spoon in the jalapeño chicken mixture generously.
    • Top with extra cheese and the remaining bacon.
  4. Bake Again:
    • Return stuffed potatoes to the oven for 10–15 minutes until bubbly and golden on top.
  5. Top & Serve:
    • Garnish with green onions, extra jalapeños, and a drizzle of sour cream or ranch if desired.
    • Serve hot!
