EASY Pierogi Skillet

We all enjoy a good crispy and warm pierogi, so when I saw this recipe I knew we had to give a try. Its simple, easy, and would be a great one to teach young children to make or even for a college student on a budget. With the meat, veggies, cheese, and warm pierogis is a hearty and satisfying meal that could easily make it on to anyone make again list. I know it did for us! We really enjoyed not only how easy it was but how good it was too.

14 Day Meal Plan: Fall Dinners

I hope you enjoy this round of dinner meal planning and that it helps someone else out there answer the age old question of “What’s for dinner?!” I find that it really does help with that especially in a household full of Neurodivergent people. Now this post is a little different than the other two because I have not made some of these yet and have only just found some of the new recipes to inspire me for the coming 2 week dinner meal plan. There are some classic ones in the list that I have made in the past and some that I hope will be new ones to add to the ” Make Again” arsenal.

14 Day Meal Plan On a Budget- Dinners

So after quitting my job I took a long look at our budget and decided it was time for us to go back to meal planning. This is something I have done for a very long time but we take a break from when finances allow. However, now that we are back to a single income family of 5 it was time to start cutting back and reassessing our bills. I figured that there are many out there who could use this to help them as well, so I decided I will share with you what I have put together over the last few months. Below each recipe name will be the links to where I found the recipes; also some will have our own variations put up in separate blog posts, and others will have reviews.

Kitchen Witchery? What is that?

Kitchen witchery is a growing trend within contemporary Paganism. After all, the heart and soul of many contemporary households is the kitchen. Where do the majority of your guests hang out when you host a party at your house? Naturally, the kitchen! In addition, the kitchen has once again become a place where people spend hours rather than minutes due to a declining economy and an increasing number of people making meals from scratch. Therefore, it comes as no surprise that kitchen witchcraft has gained popularity.

Simple Ground Turkey Rigatoni Soup

This is one of my go-to soups for cold weather, and it is a family favorite. It is both hardy and flavorful, perfect when paired with some warm biscuits out of the oven or even some focaccia bread.

Simple Ground Turkey Rigatoni Soup: [ You could even do this in a crockpot- Just cook your meat first before tossing it into the crockpot] Ground Beef or Turkey [1-5 lbs] depending on how much you want to make.

Crockpot Pork Curry

Who doesn’t love a good set it and forget it meal, I adore my crockpot during fall and winter months, it makes it so much easier to make more than one thing at a time. This crockpot pork curry was so tender it fell apart before we even really got to shredding the meat.

Cauliflower Tikka Masala

Tikka Masala, is a warm and inviting combination of spices. It is perfect for the cooler weather that is coming and also a wonderful comfort food for the whole family to enjoy.

Eggplant Parmesan

The whole family will love this classic eggplant parmesan! Slices of tender eggplant coated in homemade breadcrumbs, and then layered with melted cheeses & rich marinara! Whether you’d like to bake or fry the eggplant, this recipe has a method for both.

Mushroom French Dip Sandwiches

I love a really good French Dip with a hot cup of Au Jus on the side to dip the sandwich into on a chilly day. While it does not get overly cold in Georgia, there are some times when there is a chill in the air and with fall setting in I needed to find some warm comfort food alternatives. I found a recipe that I thought was worth trying and I AM SO GLAD WE DID. This Mushroom French Dip Sandwich is not only affordable, it is delicious! If you do not have a lot of time to make the Au Jus yourself you can always sub it for a package of mushroom soup or even onion soup, just add water/ heat it on the stove and call it good.
